Dhabas, the rustic roadside eateries in India, are renowned for their delectable and hearty fare. This recipe brings those delightful, robust flavors to your table, making it an ideal choice for a hearty meal.

Ingredients:

Paneer (Cottage Cheese): 250 grams, crumbled.
Onions: 2 medium-sized, finely chopped.
Tomatoes: 2 medium-sized, finely chopped.
Green Chilies: 2-3, finely chopped (adjust to your spice preference).
Ginger-Garlic Paste: 1 tablespoon.
Red Chili Powder: 1/2 teaspoon.
Turmeric Powder: 1/4 teaspoon.
Coriander Powder: 1 teaspoon.
Cumin Seeds: 1/2 teaspoon.
Garam Masala: 1/2 teaspoon.
Salt: To taste.
Oil: 2 tablespoons.
Fresh Coriander Leaves: For garnish.
Fresh Lemon Juice: 1 tablespoon.

Instructions:

-- Start by crumbling the paneer into small pieces and set it aside.

-- Heat oil in a pan over medium heat. Add cumin seeds and let them splutter. Now, add the finely chopped green chilies, ginger-garlic paste, and sauté for a couple of minutes until the raw aroma disappears.

-- Add the finely chopped onions and sauté them until they turn golden brown. Then, add the chopped tomatoes and cook until they turn soft and the oil begins to separate.

-- Add the red chili powder, turmeric powder, coriander powder, and salt. Mix well and let the spices cook for a minute or two.

-- Now, add the crumbled paneer to the mixture and gently combine it with the spiced onion-tomato base. Cook for a few minutes until the paneer is well-coated and has absorbed the flavors.

-- Sprinkle garam masala, and stir in lemon juice for that tangy kick. Cook for an additional 2-3 minutes.

-- Garnish your masala paneer bhurji with freshly chopped coriander leaves.

-- Your dhaba-style masala paneer bhurji is now ready to be served hot. It pairs wonderfully with roti, paratha, or even a slice of fresh bread.
